If you are planning for an exquisite dining experience with your beloved mom this Mother's Day, take a look at the meticulously crafted menu by resident culinary designer Chef Anne-Cécile Degenne of Xperience Restaurant. The mom who loves French fusion cuisine will surely enjoy it.

The 4-course Mother’s Day menu is offered from the evening of the 9th of May to the afternoon of 10th May where diners can choose between an exquisite dinner or a lovely Sunday brunch.

All dishes in this special menu are made with finest ingredients imported from France, creating a quartet of delicacy that is enchanting to both the palate and the eyes.

Be welcomed by a refreshing complimentary welcome cocktail and bread, followed by a tantalising crab salad, created with Sri Lankan crabs meat strips, French caviar, crisp salad and pomelo pulps served in a light dressing of olive oil, lemon juice and grapefruit juice.  The salad is simply flavourful. The coriander and lime sorbet (which I initially thought, was of cucumber and lime), is refreshing and adds some zestiness to the salad.  For those who dislike the smell of coriander, fret not, the proportions of lime is obviously higher than the coriander in the sorbet, thus, you can barely notice the presence of coriander!

Crab Salad with Caviar, Pomelo, and Seaweed

The second starter, Seared Foie Gras and Truffle Emulsion with Mushroom Ravioli is inspired by Chef Anne-Cécile’s beloved home town, the port city of Bordeaux in South-Western France. The foie gras, pan-seared to perfection, is of no gamey taste, but of a buttery and rich taste. Beneath the foie gras, actually lies pockets of handmade ravioli filled with freshly imported white mushroom and porcini, immersed in truffle emulsion, that are simply toothsome.

Following the starters, is the the main course of Grilled Scallop and Lobster, Fennel, Orange and Basil. The Hokkaido scallops grilled to perfection, are paired with freshly imported Boston lobster and cooked with fennel, rosemary, orange juice, and olive oil. The freshness of the seafood constitute to the natural sweetness of the scallops and lobster, while the tangy fennel adds a kick to the palate.

A meal is never complete without dessert. Chef Anne-Cécile offers her own interpretation of the Black Forest - a deconstructed Black Forest of dark Varlhona chocolate mousse and sour cherry jelly or the griotte cherries.  Loved the richness of the dark chocolate, with the citrus griotte cherries striking a balance to the sweetness, while the crunchy feuillantine added some texture to the dessert. Gold flakes are on found on top of the feuillantine and griotte cherries, adding some extravagance to the dessert!

Each dish from the menu is also paired with a selection of wines to enhance the dining experience.

The Delicate Mother’s Day Quartet Dinner Menu from Xperience Restaurant & Bar is priced at SGD128++ per person, or SGD168++ per person with wine pairing. Below are the available dates and timings:
